Oh that I missed the muffins! And I hit the nail with this recipe! A little extra preparation with carrots, apples and grind the flax seeds, but it's worth it! Muffins good health, nutritious and full of good things!

Ingredients ¾ cup whole wheat flour ¾ cup white flour

¾ cup ground flaxseed
¾ cup wheat bran (me wheat germ)
½ cup brown or white sugar or 2 tablespoons fructose
teaspoon baking soda 1 tsp
teaspoon baking powder ½ tsp
tsp salt 2 tbsp
teaspoon cinnamon

1 ½ cup carrots or grated zucchini (me carrots)
2 medium apples, peeled and grated
½ cup raisins
1 cup walnuts (not set)
¾ cup milk 2% or less and MG
2 large eggs 1 tablespoon
teaspoon vanilla 2 tablespoons
tablespoons of canola oil
  • Preheat oven to 350F (175C)
  • Cover paper 12 muffin
  • In a large bowl, stir together flour, ground flaxseed, wheat bran, sugar, baking soda, baking powder, salt and cinnamon.
  • Add carrots or zucchini, apples, grapes and walnuts. Book.
  • In a small bowl, combine milk, eggs and oil.
  • Stir the mixture before avoiding over mix.
  • Fill the muffin cups.
  • Bake about 20 minutes.
