If there's one thing I rarely buy it much zucchini! This time, a friend who has given me and being against waste, I had to find a way to go! After a quick salad for dinner, I had the idea of these bars and they are amazing! Low in fat, just sweet enough and healthy! To remake with half and half dried cranberries and raisins? And why not add a little coconut? That said, they are excellent as is too!

Bars Zucchini and dates










Ingredients
¾
cup flour 1 ½ cups rolled oats 2 tablespoons
teaspoon baking powder 1 tsp
tsp cinnamon ½ tsp
teaspoon nutmeg ¼ tsp
teaspoon baking soda ¼ c.

teaspoon salt 2 / 3 cup brown sugar 2 tablespoons
tablespoons melted butter
¾ cup milk 1 tablespoon
teaspoon vanilla 1 large egg

1 cup shredded zucchini
½ cup chopped dates
  • Preheat oven to 350F. Lightly grease a 7x11 pan of (me 8x11) .
  • In a medium bowl, mix together flour, rolled oats, baking powder, cinnamon, nutmeg, baking soda and salt. Book.
  • In a large bowl, beat brown sugar and melted butter a few minutes. Add milk, vanilla and egg. Beat well.
  • Add dry ingredients to liquid mixture and stir just until moistened.
  • Stir the grated zucchini and dates and mix until blended.
  • Pour into prepared pan and bake about 30 minutes.
  • Cool completely and cut into bars.
