Banana Bread Flaxseed

I am newly addicted to cooking Ricardo ... and I found this recipe on his site. Absolutely sweet! I wanted to make mini-loaves and they are delicious!

Bread Banana Flaxseed

60ml (¼ cup) Flaxseed
375ml (1 ½ cups) all-purpose flour
7.5 ml (1 tsp) baking powder 125ml
(½ cup) unsalted butter, softened
180ml (¾ cup) brown sugar 2 eggs

250ml (1 cup) mashed ripe bananas (2 bananas)
125ml (½ cup) milk
125ml (½ cup ) chopped pecans
250ml (1 cup) dates, chopped coarsely

  • Place rack in center of oven. Preheat oven to 180C (350F). Butter a loaf pan 23x13cm (9x5po).
  • In a coffee grinder or a mill flaxseed, grind flaxseeds.
  • In a bowl, combine flax, flour and baking powder.
  • In another bowl, cream butter and brown sugar with electric mixer. Add eggs, mashed bananas and beat 1 minute. At low speed, add dry ingredients alternately with milk. At the wooden spoon Stir in pecans and dates.
  • Divide batter into prepared pan and bake about 1:15 or until a toothpick inserted comes out clean. Unmold and let cool.
This recipe can be transformed into delicious muffins. Place paper cups in 12 muffin tins and divide the dough. Bake 20 to 25 minutes or until a toothpick inserted in center of muffin comes out clean. (Me, I divided the batter into a greased 8 mini loaves and baked 25 minutes)
