I am newly addicted to cooking Ricardo ... and I found this recipe on his site. Absolutely sweet! I wanted to make mini-loaves and they are delicious!
Bread Banana Flaxseed
60ml (¼ cup) Flaxseed
375ml (1 ½ cups) all-purpose flour
7.5 ml (1 tsp) baking powder 125ml
(½ cup) unsalted butter, softened
180ml (¾ cup) brown sugar 2 eggs
250ml (1 cup) mashed ripe bananas (2 bananas)
125ml (½ cup) milk
125ml (½ cup ) chopped pecans
250ml (1 cup) dates, chopped coarsely
- Place rack in center of oven. Preheat oven to 180C (350F). Butter a loaf pan 23x13cm (9x5po).
- In a coffee grinder or a mill flaxseed, grind flaxseeds.
- In a bowl, combine flax, flour and baking powder.
- In another bowl, cream butter and brown sugar with electric mixer. Add eggs, mashed bananas and beat 1 minute. At low speed, add dry ingredients alternately with milk. At the wooden spoon Stir in pecans and dates.
- Divide batter into prepared pan and bake about 1:15 or until a toothpick inserted comes out clean. Unmold and let cool.
